How Many Calories Miso Soup Has, and What Decides It

A 245 g cup of prepared miso soup contains about 59 calories and 1,144 mg of sodium, calculated from USDA FoodData Central's entry Soup, miso or tofu (FDC 2707455, updated 31 October 2024), which lists 24 kcal and 467 mg of sodium per 100 g and gives 245 g as one cup. Restaurant servings are smaller: Benihana's US nutritional sheet dated January 2025 lists its miso soup at a 6.45-ounce serving, 30 calories and 950 mg of sodium. One instant packet, 8 to 26 grams of dry mix, prepares into 25 to 50 calories. The water contributes none of it. The calories arrive with the paste and the solids.

Why the same soup produces answers from 30 to 162 calories

Search this question and you get a scatter of numbers that look like sources contradicting each other. They are not contradicting each other. Each figure describes a different quantity of miso paste, tofu and seaweed, sitting in a different quantity of water, printed against a different reference base.

Here is what published labels and USDA records actually declare. FDC numbers below are USDA FoodData Central record IDs, and the branded ones reproduce the manufacturer's own Nutrition Facts panel rather than a laboratory estimate.

Read the calorie column against the amount column and the pattern is dull in the most useful way. Ito's 624 g tub declares 5.4 times Benihana's calories while weighing a little over three times as much, because calories arrive with the solids and water carries none of them. Benihana's bowl is thin: 30 calories across 6.45 ounces works out near 16 calories per 100 g, well under USDA's 24. Their sheet heads that column "Serving Size (ounces)" without saying whether it means weight or fluid measure. Either reading lands between three-quarters and four-fifths of a US cup, so the conclusion holds, but I would rather they printed which one.

The macros behind USDA's cup are as flat as the calorie count implies: 5.4 g of protein, 5.6 g of carbohydrate and 2.1 g of fat, worked from the same per-100 g record. Under general Atwater factors those split the energy almost three ways, about 22 kcal from carbohydrate, 22 from protein and 19 from fat, and total nearer 63 than 59. Log USDA's 59; the gap is ordinary drift between a calculated total and a surveyed one. Five grams of protein inside a 59-calorie cup is dense for a broth, and it is the likeliest reason a bowl reads as more satisfying than its number predicts. I would treat that as a plausible mechanism rather than a settled one.

Where the calories sit: paste, tofu, wakame, dashi

You can rebuild the bowl from four labels and check USDA's answer against your own arithmetic.

Add those: 34 plus 21 plus 3 is 58. USDA's independently surveyed cup says 59. Two routes, one answer, which is about as much confirmation as nutrition arithmetic ever gives you.

The type of miso moves the sodium further than it moves the calories. Sky Valley's red and white soup pastes declare identical calories per 18 g tablespoon and differ by 30 mg of sodium, 790 against 760. Darker, longer-fermented pastes have a reputation for running saltier, and the two labels in front of me sit closer together than that reputation predicts. I have not compared enough jars to call it a rule.

Instant miso soup: the packet is the whole calorie count

This is the comparison that trips up calorie trackers, because an instant bowl looks like a restaurant bowl once it is poured. It is not the same object on a label. The instant packet is a closed quantity of dry matter with a printed weight, and everything you will consume is inside it before the kettle boils.

Across the panels I pulled, US instant packets weigh 8 to 25.8 grams and declare 25 to 50 calories with 590 to 960 mg of sodium. Kikkoman's tofu miso, Mishima's, Sushi House's and Edward & Sons' Miso-Cup with seaweed all land on 35 calories per 9 to 10 g packet, with sodium between 710 and 770 mg. Eden's 8 g red miso cube is the lightest at 25 calories and 590 mg. Edward & Sons' 25.8 g natural Miso-Cup serving is the heaviest at 50 calories and 960 mg — practically the same sodium as Benihana's restaurant bowl.

The prepared volume is the part nobody prints on the front. Kikkoman's US sachet is one of three in a 1.05 oz (30 g) carton, so 10 g per packet. The water volume lives on the back of the box rather than in any database, which is why the next section reconstructs it from the panels instead of quoting it. Pour a mug instead of a bowl and you have a weaker soup with identical calories.

The same Kikkoman packet, declared two ways

I spent my first working years at a customs brokerage in Warsaw checking food declarations against the goods, and the habit that stuck is holding two versions of the same carton side by side. Kikkoman's instant tofu miso soup is made in Japan and sold into both markets, and its two panels look like different products.

Kikkoman Europe declares the soup per 100 ml prepared: 92 kJ / 22 kcal, 0.9 g fat, 1.5 g carbohydrate, 1.7 g protein and 1.2 g salt. Kikkoman USA declares it per 10 g packet dry: 760 mg sodium at 33% Daily Value, 1 g fat, 4 g carbohydrate, 3 g protein. USDA's capture of an earlier US print run for the same item records 35 calories and 740 mg sodium — the same product, an older label.

Those two panels reconcile at exactly one water volume. Thirty-five calories divided by 22 kcal per 100 ml gives 159 ml. That is the serving the European panel is built on, and it matches the 160 ml European retail listings quote from the pack's directions. I have not photographed that box myself, so I would call the 159 ml the finding and the 160 ml its corroboration. Run the salt the same way: 1.2 g of salt per 100 ml over 160 ml is 1.92 g of salt, and under Regulation (EU) No 1169/2011, Annex I, salt is the sodium content multiplied by 2.5. Divide back and you get 768 mg of sodium against the 760 mg the American panel prints. Two regulatory systems, two reference bases, one bowl of soup, agreeing to within a rounding step.

The shortcut worth keeping: on any EU or Polish panel, multiply the grams of salt by 400 to get milligrams of sodium. Most of the importer correction emails I handled concerned allergen lines rather than nutrition. The reference base is rarely wrong, which is why it rarely gets corrected — it is simply not the number the reader thinks it is.

Why packet calories cluster at 25, 35 and 50

Look again at the instant column and notice that almost nothing lands on 27 or 43. That is not manufacturers copying each other. It is 21 CFR 101.9(c)(1), which requires caloric content to be "expressed to the nearest 5-calorie increment up to and including 50 calories, and 10-calorie increment above 50 calories, except that amounts less than 5 calories may be expressed as zero."

So a packet that laboratory-tests at 33 calories prints 35. One at 37 also prints 35. The gap between two identical-looking labels can be four real calories, and the gap between two different-looking ones can be one.

Sodium is rounded by the same section, paragraph (c)(4): zero below 5 mg, to the nearest 5 mg between 5 and 140, and to the nearest 10 mg above 140. Every sodium figure in the table above is therefore a ten-milligram bracket, not a measurement.

The rounding rule also explains the disappearing seaweed. A gram of dried wakame is 2.5 calories, under the five-calorie floor, so a manufacturer may legally declare it as zero. Nothing is being hidden. The label is doing what the regulation tells it to do, and a calorie tracker reading three packets a week is quietly under-counting by single digits.

The sodium line matters more than the calorie line here

Miso soup is one of the few foods where the calorie question is the easier one. The FDA's Daily Value for sodium, set in the same section of the regulation, is 2,300 mg for adults and children aged four and over.

Measured against that: Benihana's 6.45-ounce bowl at 950 mg is 41% of a day. USDA's cup at 1,144 mg is 50%. ShopRite's refrigerated cup at 1,160 mg is slightly more. A single Kikkoman packet at 760 mg is 33%, which is the figure printed on its own panel. In European terms, that packet is close to 1.9 g of salt against a reference intake of 6 g.

You are drinking 30 to 60 calories and a third to a half of your sodium allowance. If you track one number, that is the one with consequences.

How to price the bowl in front of you

  1. Find the paste. Count tablespoons, or read the packet weight in grams. One tablespoon of plain miso is 34 calories and 634 mg of sodium by USDA's figures; instant packets print their own weight on the sachet.
  2. Count the solids. Silken tofu runs about 53 calories per 100 g, so weigh or estimate the cubes. Dried seaweed, scallions and dashi together rarely reach 10 calories.
  3. Check what the panel is measured against. A US panel gives one serving as sold. An EU panel gives 100 g or 100 ml, sometimes of dry mix and sometimes of prepared soup, and it says which. Multiply or divide before you log anything.

Restaurant soup has no packet to read, so treat 30 to 60 calories as the working range and assume the sodium is near 1,000 mg unless the chain publishes otherwise. Benihana does. Most do not.
